Roasting My Bumper Crop of Tomatoes

The garden has been amazing this year, I have more tomatoes than I know what to do with.
I don't know how to can, 
but I read that you can roast and freeze the tomatoes with similar results.
Here is my first attempt,
I roasted a lot of tomatoes and they cooked down to nothing!
 
I have a lot more to roast...and I see a lot of BLT sandwiches in our future.
We love grilled cheese and tomatoes too, we really enjoy sandwiches in the summer for supper.

Here's what I used, and I followed this recipe from Pinterest.
Tomatoes, fresh garlic, Italian seasonings, kosher salt and EVOO.

I am growing some "odd" shaped tomatoes, so I used all of them up first.

Cut them into 8th's, into the bowl with smashed garlic,

EVOO and Italian seasonings...

onto the lined cookie sheet...don't crowd them.

I cooked them at 350 degrees, for 1 hour and 20 minutes and that seemed just about right.
One end of the cookie sheet got a little burnt, dark but the rest were fine

Once they cooled, I scooped them into a freezer bag and placed them flat into the freezer.
I still have a lot of tomatoes, so I will be doing more.

I have a few ideas of what these can be used for...

Roasted Tomato Sauce for Pasta
 Pizza Sauce

I didn't know you could do that with tomatoes. We have more that are ready to pick than we can eat. I thought about canning this year (for the first time), but didn't buy the necessary items in time. Roasting might be an option then.

Wow, what a bumper crop for sure!! They look so delicious!! Definitely sandwiches are a great way to use them up and so convenient to make on summer days! Salads come to mind too on how to use them up. I never made it but I know a lot of people do like to make their own pasta/spaghetti sauce :)

Dear Debbie!
Your fried tomatoes look delicious. However, a lot of electricity is consumed, which is very expensive in my country.
I have loads of delicious tomatoes this year too. When washed, pour boiling water over it. After 5 minutes, pour out hot water and pour cold water over it. Now the skin is easily removed. When cold, I cut into pieces and crumble. In autumn and winter I take 1 serving and make tomato sauce for pasta, or tomato soup.

Debbie, your tomatoes look beautiful! And I'd think your roasted tomatoes would make wonderful tomato sauce for spaghetti and meatballs with all that garlic (I love garlic!). And we also love BLT's... and haven't really had good Creole tomatoes in a very long time.

I'm cooking purple hull peas today! Our tomatoes didn't do well so I've been buying them at the store. Grilled cheese and tomatoes....I never thought of doing that before - but I will now! Thank you!

I have never cared for canning but I have cooked them in a pan and froze them quite a few years ago, I make a dish with tomatoes, rice, bacon, hamburg, chilli powder, garlic powder, celery salt, pepper and tomato soup, that is what I would probably use them for. We have had a few tomatoes and we also have had a few that were rotten when I went to pick them. I have only had two peppers this year so far. I think the place we have them right now they don't get as much sun.

Debbie - that looks like a great alternative to canning, which requires a lot of supplies and the care to make sure the lids are sealed properly! I have thought about how my Mom used tomatoes, and the only one I can think of (that you didn't already list) is to add the tomatoes to a crock pot when preparing a roast. I do not have a vegetable garden - hard to do around here with the deer!

Debbie, did you use the weird ones first because you didn't want to look at them - or - did you think they would have better flavor to make up for their oddity? Just wondering.

Your tomatoes do look good.
Tomatoes roasted are just delicious, but then tomatoes in a salad are delicious too, and then there is tomato soup!
I think they are a big YUM :)

We've been roasting cherry tomatoes, adding herbs and garlic. Then Feta or mozzarella cheese for a fresh pasta sauce, absolutely delicious. Or just the tomatoes roasted with the herbs and garlic -- tomato jam for sandwiches!!! (But we don't have enough to freeze now -- I wish I'd known about that trick when we had our own garden and a bunch of hungry kids! Frozen that way, It should work wonderful for sauces etc all winter -- you will be so happy.)
