The calendar may not say it yet, but it's Summer here at the
Jersey Shore.
The temperatures have been rising, it's hot and it is humid.
We got a little bit of rain but not enough to keep my garden happy.
Watering everyday is a must!!

right now, we are going to eat!
During the summer I like to eat light,
salads, pasta salads and fresh veggies from the garden.
Corn on the cob is a must.
I skinned the eggplant, sliced it, breaded it in a mixture of parmesan cheese
and flavored breadcrumbs.
Add 3/4 of a stick of melted butter onto the cookie sheet,
then the slices of breaded eggplant.

Into the oven, 450 degrees for 5 minutes on each side.
I have a love/hate relationship with this part,
I hate turning the oven on but I love not having to clean the stovetop.
It comes out very crisp and very beautiful!
Restraint must be used at this point,
not to just fork this stuff right in to your mouth *smile*
Fresh mozzarella, fresh tomatoes from the garden center and
fresh basil from my garden...
stacked and drizzled with Sweet Basil Olive Oil
and White Balsamic Vinegar
We had white corn on the cob from Florida
and it was delish.

Looks delicious! But it's not quite summer here yet, at least for food.
i eat cold cereal sometimes. :) chicken salad or tuna salad on french bread. fruit and berries and nuts. and water. lots of water!
I have my first tiny eggplant. I am going to fix it just this way when it is ripe. It is hot here and I need to get my summer cooking mojo back.

Only 10 minutes in the oven for these golden brown eggplants? I will certainly have to try it this way, better then cleaning up the deep fryer which I only use outside. I cook for my parents alot of times & we eat light during summer lots of vegetables like you, alot grilled. Basil I have some growing I was wondering if I can cut some & put in my olive oil bottle. The weather here is very Hot already. When I get home I have to water everything especially the impatiens flowers. My mouth was also watering while scrolling down at your pictures.
yes karen 450 degree oven, 10 minutes, 5 on each side and they were very crisp. my basil, which i moved outdoors is not doing well. i have spent a bit of time on google trying to figure out what i am doing wrong. i think perhaps the burlap bag is too small. i may transplant it.

it's very hot here, i went out and watered and i am paralyzed next to the fan. it's just too hot for me.....and that's why i LOVE winter!!!

I love eggplant parm, and I always do it in the oven, too. Our kitchen doesn't get hot when the oven is on, so I don't mind. I also like my eggplant sliced paper thin and piled with some mozzarella. Like you, we like to eat light in the summer -- veggies and fruits and salads. Today, there was a hoagie sale at church (once-a-month), and we always buy them for our dinner. You can't get any cooler or easier than that!
Oh my goodness; now for sure I'll be getting some eggplant. I have cooked it!
Have been cooking black beans and rice lately; I read how good the beans are for us, and once again I'd never had them before. Now, Hunter is coming over to spend a few days and she's gonna want chicken strips. I love making those for her. And, she loves corn on the cob also. :)

So glad you mentioned the 3/4 stick of butter I would of left that out & then not be as good as yours. Can't wait to bake it this way. Your basil plant may be getting to much water in the burlap & roots may be rotting. I had to move mine it wasn't doing well in the full sun, I have mine in a big pot. I love brushing against it by accident while watering it smells so good. First time Ive planted basil I love it flavors food just right.
I have heard you can cook chicken strips in the same way, but I have never done that! Enjoy your time with hunter and don't make her eat beans....unless she loves them ;)

When it is too hot to cook, sandwiches and fruit... I remember growing up having corn on the cob as our main meal when it was Hot.

Cold pastas and lots of wide range of veggie salads, tomatoes and more tomatoes when it's really hot! Even corn on the cob, and always watermelon!
The food presentation looks professional. I am going to want to try this one. The egg plant, the corn; it all looks so yummy.
As far cooking in the summer; we love to grill and i also do some crock-pot cooking.
