Soup and Stuff

The hubs picked up a five dollar chicken at Costco before the last storm.
We get three meals from one chicken.
I don't have a recipe for my Chicken Noodle Soup...


these are the ingredients...I just eyeball everything.


Whenever I make this soup, I always used leftover chicken from Costco,

and for this pot of soup, I had frozen stock that I made myself.
I wrote about making my own chicken stock here.


The homemade stock was delicious and made a big difference in the soup.


It was so delicious, we can't eat soup without crackers and I always have some in the pantry.

And because I had the good ole' five dollar chicken from Costco...

I made a big bowl of chicken salad...h
ere's a look before I added the mayo.

We still have snow on the ground and I am debating if I should switch out my flag.

My daffodils are starting to make an appearance, but the crocus will bloom first.
16 days until spring and as much as I love winter and snow, I am looking forward to spring.
Our 10 day weather forecast is awesome, 70's next week!

The chicken noodle soup looks really good. I often buy the rotisserie chickens from Walmart. I get a lot of meals out of one chicken. I should check and see if the daffodils are poking up yet here.

A chicken lasts us forever these days. We finished off one with chicken soup too. Love that meal!

The soup looks great. Our snow has finally melted enough to see some ground. But I checked today.. no daffodils yet.

Debbie, your food pics are always wonderful. Makes me want to cook something. Today I actually made guacamole for the first time. I love avocados, but never get it when out as they use cilantro (which tastes awful to me) and hot peppers (which I also don't care for). But mine was really good and I'll make it again (without those ingredients).

Nice the chicken can feed you for that many meals, can't beat it. I wish I liked soup but just isn't my thing, I am just too picky eater.
Ha Ha, yes time to take down that flag :) isn't it wonderful seeing the plants start to break through, can't wait for everything to be green again!

This looks really yummy Debbie. We just bought the Panera Bread Broccoli and Cheese Soup from CostCo. It will be the rotisserie chicken next so that we can make this. Nothing like a good hot soup on a cold day is there? Thankfully temperatures are rising.
