Boursin Tomato Pasta

 Is there anyone here who does not love pasta?
It is, perhaps, one of my favorite foods and one of my favorite meals to prepare.
Apparently, this recipe, is a TikTok sensation.
I don't have a TikTok but I saw this on Instagram.
There are a lot of recipes on line for this dish, many start with the tomatoes and cheese in the oven.
I cooked it on the stove top and it was super simple, but filled with flavor.
I'm sure you could use any tomatoes, large or small in this dish when your garden starts producing.

So to keep you interested, let's start with a pretty picture of the end result.

Here is the ingredient line-up...
I started with this recipe, I tweaked it a little, adding a few things.

I started with a diced sweet onion, sauteed with a little olive oil, which was not in the recipe.

I only used 3 cloves of garlic and added sun dried tomatoes and a squeeze or 2 of tomato paste.

I used Angel Sweet grape tomatoes, halved...

Boursin Cheese...

makes this delicious creamy sauce.

I used small penne pasta,

Spinach...

wilted,

and fresh basil from my garden.

I LOVE PASTA! I eat it and enjoy it because life is too short not to enjoy it. :) It is my most favorite thing!!! Besides pizza.

Now that we have to be on this low carb diet, we don't have pasta much at all, but when we do it has to be whole wheat or whole grain. It sounds interesting, I don't think I have ever had Boursin cheese before
