Making Fun In The Kitchen

I watch Allrecipes on YouTube...they feature some really quick, fun and easy recipes.
I watched recently where the hostess prepared what I would call a
- Deconstructed Meatball Parmesan Sub -
I do not remember what she called it and I could not find the recipe but remembered how to make it.
Anyone can make a Meatball Parmesan Sub Sandwich right?
But to add a little fun to the humdrum of cooking, I recreated what I remembered her doing.

This was all I needed and I had everything on hand.
1 loaf of garlic bread, frozen meatballs with sauce, mozzarella and parmesan cheese.
First I cooked the meatballs per the instructions on the box, less 15 minutes.

I cooked the garlic bread...

cut it up...

and put half of it in the bottom of a greased 8 x 8 casserole dish.

Topped with maybe 3/4 cup of mozzarella cheese....

the meatballs, they are large so I cut them in half, added all the sauce and some italian spices.

Next I added the rest of the cut up garlic bread, parmesan cheese, and mozzarella cheese to cover.

I think I baked it for about 20 minutes, it looked like this when it came out of the oven...

and this before we devoured it.

This is the best way to eat a Meatball Parmesan Sandwich, it was delicious!

After I finished this post, I found the recipe here.
I cut this in half and tweaked it a little, primarily because I did not have the recipe.
If you follow the recipe, it will feed 6...
but either way if you add 2 jars of sauce, your bread will be very soggy.
You get the gist, it's not really an exact science.

I just wanted to add that because this is not a "food/cooking" blog,
I don't take elegant pictures of the food I make.
Maybe I should...maybe I will.
I guess I have been sharing content I don't usually share because not much is going on.
It is warming up, though...and I hope to get out more!

That looks really good. I like easy recipes too because cooking for one is a pain. Thanks for sharing this.
