Cream Of Potato Soup

My mom made this soup for me maybe 20 years ago and I had no idea what was in it.
When I asked her for the recipe, I was so surprised.

This is it - that's cooked bacon on top of the soup.
I am not a big fan of using canned soup in what is suppose to be homemade soup.
I was reluctant to make this soup for that reason...
BUT...
it is so good and so easy!

Here's the recipe...
I use a sweet onion and heavy cream instead of milk.
The hubs loves this soup,
but he hates mushrooms, won't eat them...
up until now he hadn't a clue what was in this soup.
But he reads my blog every day, so, well,...he knows now!

I fry the bacon right in my soup pot.

The potato dice is about this size...

Top with crumbled bacon and here is the finished soup.
Nothing fancy but let me tell you, 
it is so yummy good!

Oh my.....I love tater soup but have never made it this way. Mine is all homemade but I think it would probably be easier to do it this way. I love to cut up green onions and along with that, the bacon I had cheddar cheese on the top. Darn....now I want tater soup! Thanks DEBBIE!

But really, there are so little of the "dreaded" mushrooms, in this. He never knew, up until now.

Our daughter can not abide mushrooms either. And her husband's hobby is very fancy cooking. I don't know how he does it! ,-) Around her and mushrooms.

A lot like these soups can use cream of almost anything soup to replace mushroom! I like it when there's still some diced in there. So easy. Hubby won't even try it! :(

As a child Fridays were usually all about soups and leftovers, and soups with leftovers! Mystery night I'd call it. In case you're wondering, I haven't followed my mother in that tradition!
