We didn't celebrate Valentine's Day on Sunday...
I was feeling a little sad about that so I decided to make dinner a little special on Monday.
I made Spaghetti and Stuffed Meatballs with Garlic Bread.
I cooked this simple sauce all day in the slow cooker,
* Sauce Recipe *
along with meatballs, stuffed with mozzarella cheese.
I did not use a recipe for the meatballs.
I used one pound of ground chuck from the butcher,
I grated the onion and garlic and added olive oil because I did not have any milk.
Fresh basil, a bit of Italian seasonings, two eggs and seasoned breadcrumbs.
Making a "dent" in the meatball provides a great way to stuff them with the fresh mozzarella
I had picked up at the butcher.
They make it there.
I did not precook them, they cooked in the sauce all day and were especially delicious.
We ate about half of the meatballs on Monday...
Tuesday I made open faced Meatball Parmesan Sandwiches...
day two was way better and a lot easier!!

I LOVE meatball sandwiches, and that one looks fantastic. I cook meatballs in sauce as well, and I used to get a lot of flack from people who baked them first. It's nice to see someone else does it too.

Hi Debbie! Looks yummy! The hubby and I don't go out on Valentine's Day. We do something the day before or the day after. Why fight the crowds and the jacked up prices.

I like the idea of making my own marinara sauce, there is so much added things in the sauces you buy in the store, and I love that you can get two different meals out of one cooking!! Thanks for sharing, and your table setting was lovely too!
Looks delicious! The only thing we had for Valentine's Day was strawberry cupcakes! They were simple and good!
