Good morning friends!
Soup weather is upon us so today I am going to share
with you a recipe for my new favorite soup.
I found the recipe on Pinterest, shout out to Pinterest...
you are the second place love of my life.
Here are the ingredients...most you probably have on hand and this soup was super simple to make.
The recipe details are here, it's called "damn delicious chowder".
I tweaked the recipe a little - instead of chopping the carrots, I shredded them,
and since my carrots had previously taken steroids,
they were ginormous, I used only two.
I sautéed this for about 10 minutes, until all friends were soft.
Rachael Ray Stock next, hers is the best.
I used 4 cups instead of 3 because I was using cream.

Potatoes, I used 4 because we are potato lovers,
and 2 cups of diced, by the hubs, chicken.
When the potatoes are soft, add the milk or cream.
The recipe calls for milk, I used heavy cream, and it was heavenly.
At this point, the recipe calls for cheese.
I did not add cheese...although I LOVE cheese, I don't love it in my soup.

I did not garnish it, or fancy it up for pictures.
The bread and crackers you serve with it,
are almost as important as the soup.

This made a huge pot and it was gone in 2 days.
It was damn delicious!!

Since my last Dairy-"Fed"-Fiasco, I have steered clear of all Dairy! ('Cause Di*r*he* does not rock!!!) So we won't be doing-dairy, for a while yet.
