Winner, Winner Chicken Dinner

This picture of 
has been floating all over the internet.
I saw it on Facebook...It sounded super simple and looked so yummy,
I was dying to give it a try.
It's suppose to be a one pan meal, chicken and potatoes, 
and in my house, thats a food group.

I had all the ingredients on hand except fresh thyme, so I used dried thyme and that seemed fine.

Mix the pictured ingredients together for the marinate, the recipe is here,

with 4 chicken thighs, I used bone in.
Marinate 1 hour.

Sear thighs...
then you are suppose to have enough room in the pan for the potatoes, but I didn't think I would,

I transferred the thighs to a roasting pan,

sautéed the potatoes for about five minutes in the same pan with the marinate,

then transferred them to the roasting pan.

After 20 minutes, it comes out looking all glazed and yummy like this.

I had 2 tomatoes left in the garden, so I sliced them and added them to the plates.

My opinion, delicious!!!

ok, sounds good. But so time consuming. I jam a hunk of meat covered in bbq rub in the convection oven, nuke a potato or frozen veggies, and dare Dina to complain. (Sometimes she cries...but only because I used too much pepper) [maybe if I start burning everything, she'll start taking me out to eat]

Now that does look a great dish.
I would just substitute the potatoes for cubed swede, as swede doesn't raise Eddie's blood sugar levels as potatoes do!

Doesn't meat taste good when it's been marinated.

I haven't seen this recipe, but I tried honey garlic chicken in the crock pot tonight and it was yummy! I love finding new wys to cook chicken- since I would rather eat that than red meat.
