I know it's shocking, but true.
The hubs doesn't like mushrooms.
The mushroom flavor is fine,
The mushroom flavor is fine,
he loves Chicken Marsala but always picks all of the mushrooms out.
So for that reason, I never bothered with Beef Stroganoff.
I recently found a recipe for One Pot Beef Stroganoff
that didn't have mushrooms.
I love one pot meals, it will have mushroom flavor but
no mushrooms...that sounds perfect I thought.
The Ingredient Line-Up
* 1 tablespoon of olive oil
* 1/2 medium onion, chopped (about 1/2 cup)
* 1 pound lean ground beef
* 2 teaspoons minced garlic
* 15 ounces of beef broth
* 1 10 oz can of cream of mushroom soup
* 1 cup nonfat milk (I used 3/4 cup of heavy cream because that's all I had)
* 2.5 cups small, dry pasta (I used egg noodles)
* 1/2 cup sour cream at room temperature
* 2 Tablespoons of freshly chopped parsley
* Salt and pepper to taste
Directions:
1. Heat olive oil in a large 12" skillet. Add onions and cook 3-4 minutes, until translucent.
2. Crumble ground beef into skillet, cook 5 - 6 minutes until no longer pink.
3. Drain grease and season with salt and pepper.
4. Add beef broth, soup, milk, garlic and pasta/noodles. Stir to combine and bring to a boil.
6. Reduce heat to low, cover and cook for 15 - 20 minutes, until pasta/noodles are tender.
7. Remove from heat, stir in sour cream, top with parsley.
8. Divide into bowls and serve immediately.
It was delicious and you could certainly add mushrooms,
if your family so desires.

Easy, quick and only one pot to clean up.
I served it with hot, crusty bread to soak up all the juices.
This would be an awesome comfort meal if you get snowed in this winter!!

I've never made this, but my mom made it quite often. Very, very good. Yours looks good also. :)
You really made a beautiful meal. I'm adding this to my list! I think I'd make it with steak slivers instead of ground beef. I like your idea of mushroom soup instead of mushrooms.

I made it 100 years ago when we first got married, so you know then, I was just learning to cook. :) I need to try this recipe. I think it looks fantastic!! One pot to clean is a big plus.

When I make a Stroganoff I use cauliflower rice to accompany the meat and not pasta, but then its not a one pot meal ...

My hubby loves this, it is funny I like mushrooms most of the time but don't care for mushroom soup, it is funny what we like and don't, great fall and winter dish!
