Yesterday, it snowed!!
You all know how much I love snow,
because I am lucky enough to be able to stay home and just enjoy it.
Yesterday was no different.
There are 2 Parts to the perfect snow day.

It snowed all day, the flakes were so small you could barely see them
and the accumulation was just like a dusting.
I have never seen anything like it!!
Part 1, done.
Food is the other part of a snow day I love.
When it snows, you have to stay home, bunker down and eat comfort food.
The stove has to look like this and the house has to smell awesome.
Part 2, was accomplished.
I made Potato Soup and Cucumber Sandwiches...
everything was so good.
For those who are interested, I will share the recipe...
this is super easy but is only "partly" homemade.
In a large soup pot cook 6 strips of bacon, transfer to plate.
In bacon drippings, sauté one large sweet onion until translucent.
Add 4 - 5 cups of diced potatoes, cut into 1 inch squares.
Add just enough water to cover.
When the water boils, cook for 7 minutes, until the potatoes are just tender.
Add one can of cream of mushroom soup,
one can of cream of celery soup and 1/2 a pint of heavy cream.
Simmer until all ingredients are incorporated, do not boil.
Serve with bacon crumbles on top.
Onion and potatoes...covered with water.
Here's the size of the dice.
Everything's in,
and I served it with yummy, crusty French Bread,
cut in half for easy dipping.
The cucumber sandwiches were so yummy.
Soft bread, crusts removed, sliced cucumber and a homemade dill spread.
I get this dill spread dry, at one of the craft shows I go to.
I mix it with one cup of mayonnaise and one cup of sour cream.
It is awesome to dip fresh veggies in as well!!

Wow, that soup looks great! I am definitely going to make that. We probably got a little more snow than you did, but not by much. It sure looks pretty. btw, you have the cleanest stove I've ever seen. I'd be embarrassed to show mine in a photo!

Snow does equal comfort food. I made a potato soup for my boys last fall in the slow cooker, and I added cheese. They loved it. Today, it's pork loin, onions, and applesauce in the slow cooker. Hoping my boys are coming.
Your soup looks delicious! I'm going to try that one day, thank you Debbie! I made the 15 bean soup again yesterday but started it too late for the crock pot. So, I made it on top of the stove. I kept thinking of things to add like carrots, and a large potato cut in small pieces plus onion. I have to say, it was GOOD, and I have enough for dinner tonight. :)

What time is dinner? Ha! Ha! It looks so yummy, I may have to change my dinner ideas for tonight! It's an extremely cold day here in my world and nearly all schools are closed because of it! Yeah for hot soup!

Do you have the freezing temps too? We got 4 to 5 inches of snow and the temp is in the single digits. Tomorrow -9 oh boy..... I've worked one day this week...... 😁❄️❄️

I love potato soup! Your recipe is very similar to mine, except I add celery and then I put in a block of cream cheese instead of the heavy cream. The cucumber sandwiches sound good, too!
It's all about the food for me...winter or not! lol!
Well, this is timely, for we have a deep freeze coming in as I type! I'm talking 10 degrees, which is pretty frickin' cold for the Deep South. This looks so delicious and easy! Thank you for sharing. :)

Look potato soup. I make mine thick and I had bacon and cheese on top. Yummy...been awhile since I have had any, thinking I might need to make some now. Yummy.
