Let's Cook, Part I ~ The Bacon-Ate-Er

It's so cold here at the Jersey Shore, I have been inspired to cook!
Yes, folks, I have been in the kitchen and I have actually enjoyed it!!
 
Inspired by Pinterest let me show you what makes this girl
rock in the kitchen.
 
First I made breakfast,
 
That tiny box of hash browned potatoes,
sure did produce a lot of potatoes.
 
You make little nests, in your muffin tin and bake at 350 for 15 minutes.
 
I only made four cause it's just the hubs and I,
so the rest of this I just kinda winged.
 
The nests look like this when they come out of the oven.
I pressed in crumbled bacon, cracked one egg in each
and topped them with shredded cheddar and more bacon.
You can never have too much bacon, right?
 
Now you forget to take the most important picture,
and back in the oven this goes for 13 minutes, till the eggs are set.
 
I thought these were pretty good, not amazing but the hubs LOVED them!!

So for me, that's a score!

I would not make these again as I have other
egg concoctions that are way better!!

They look good to me Debbie. I have a box of those hash browns in my cupboard right now. I have no idea what possessed me to buy them. I know what to do with them now.

Those look good- I wonder about leaving out the nests... trying to stay off the carbs here.

Oh I am soooo with you! I made FOUR Pinterest recipes this past week for dinners. It's the cold outside that makes me want to create in the kitchen...and eat! :)

Oh, my husband will LOVE these! It will actually be about a year before I can try them though--we have a lot to lose on Nutri-System. Two weeks down and about 58 more to go! :-)

Those look really good. I may try that when the kids are here for the holidays next year. I can leave the bacon out for my vegetarian daughter. I think they would be impressed.

Hi Debbie..Looks good, but I'm with you, looks like a bit of fussing!
I am fussy with my eggs,
the yoke has to be runny : )
My daughter tried them for my grandson, he liked them, but he would eat anything ; )!

These do look good Debbie, but too much work for me at breakfast time. I just pour a bowl of bran flakes and sultana's and a bit of milk - easy!!! But then I'm a bit lazy :)

Debbie, glad this turned out well for Chuck, but not something I will try only because we don't buy the boxed potatoes, so I am wondering if fresh potatoes would work too...maybe for some future breakfast. Yesterday, I made banana net muffins using our tins. And yes it is cold here too in VA with a bit of snow too...yeah. Being former NJ folks we do miss winter weather, so are glad to get a bit.
