I have talked before about the evolution of cooking in my life.
I went from loving it, to hating it and now...
I have a newfound love for it, once again.
There's been a lot going on in the kitchen,
and I have not done a "food/cooking" post in a while.
So here we go, if you are hungry,
you have been forewarned.
One morning I decided to make Eggs Benedict with Fried Potatoes.
This took forever, I'm pretty sure we ate it for lunch,
I used every pot in the kitchen and
I don't think I will ever make it again.
The recipe is here, but I really don't recommend it.
It was delicious!!
We ate a lot of BLT'S this summer, the garden was
very generous when it came to tomatoes.
I used up what I thought would be the last of the tomatoes,
on October 1st to make
which the hubs loves and asked for.
All the fresh basil came from the indoor herb garden, this is so easy,
creamy and really good.
I add heavy cream in at the beginning and that is not in the recipe.
This next dish I saw on a cooking show, but could not find the recipe.
They used a whole chicken, I used one split, bone in breast
because it was huge and plenty for both of us.
Thick slices of yukon gold potatoes, seasoned, started on the stovetop,
in olive oil and butter, in an oven proof fry pan.
I think I cooked these for about 10 minutes.
The seasoned chicken is placed on top of the potatoes
and finished in the oven.
The chicken looks like this when it's finished,
and this when it's plated.
That's a big piece of skin, stove top (shame on me),
chicken and potatoes.
This was so good, so easy and I will definitely make this again.
My niece Emily brought me some apples.
A little water in the baking dish, cored apples...
and stuffed with butter, brown sugar and cinnamon...
they were delicious on their own but for the purpose of this picture,
they could have used some ice cream!!
I love fall, I get my cooking juices flowing again!!

I am currently making a recipe book - pictures etc. coming soon to the blog. I needed something to get my cooking juices flowing again - it's been a BLAH summer where me + food are concerned. The cooler temps are helping - the crock pot is out, and I'm cleaning out, organizing and cooking more on the weekends. These recipes look so good!

I always love your cooking posts! Your food always looks so yummy. I love when it starts to finally get cooler again, I love making food when it is cool enough to enjoy. Keep it up, you always give me ideas. Though I did make baked apples last week, they were so good.

I have never really been a lover of cooking myself, I try new things for the hubby since he doesn't care for the same old things but I don't mind myself. I have been there with making something that took way longer than I imagined and I made a mess out of my kitchen trying to make it and even if Greg liked it I said never again.... Of them all the apples sound so good right now, may just have to do that one :)

Too funny, my hubby made those same apples for us Sunday night, (we had two of the grand-children for a sleepover and they love apples and ice cream. I made your one pot recipe of Martha's enjoyed and thought about doing it again. I might try the yukon potatoes tonight in fact! Thanks for sharing this.
Yummmmm yumm! I totally agree about Fall and cooking. It's my only season to want to do the old favorite oven meals ... Because it's pretty warm in Florida n the winter, so I do a lot of summer type of meals all of the rest of the year.
Your pictures are mouth watering. I will try the chicken and potatoes and of course the apples for sure. I do love these fall type meals. Loved this one! Blessings and hugs!
