Making Chicken Stock...

 I have never made Homemade Chicken Stock.
I hang my head in shame at the grocery store, when checking out I wonder if the cashier makes her own... 
I don't even buy the low sodium brand.
I think I will at least "look" better if I buy the low sodium brand.
What I should do is buy low sodium and just add a good amount of salt, it will taste so much better.
Everyone says "make your own, it's so easy, you control the ingredients, and it is so much healthier"! 
Am I lazy?
I bought a chicken at Costco, don't even get me started on what people say about that.
"You're going to buy that, aren't you aware of what they inject into those?"
- i am rambling -
I had the carcass with a little meat, not enough meat to do anything with, so I decided to take the plunge, and make homemade stock.
I texted the usual suspects, my friends who cook and Liz suggested...


ooooooh that will work I thought.
I used this recipe as a guide because I was only using one chicken carcass.


I used 1 chicken carcass, 1 onion, 3 carrot pieces, celery and 1/2 a box of stock that I had open.

It did not seem like there was much chicken on the bones, but there was.


I added these spices...



and enough water to cover.



I could not believe how much chicken came off those bones.
My initial intention was to make stock only...but there was so much chicken on the bones.
I picked the bones out but how can I be sure I got them all?
I would like to make a big pot of Chicken Noodle Soup, 
Using the stock I made and the chicken that came off the bones...but would that be safe, I don't know.

Putting the ingredients together was easy and took no time at all.
It simmered for 5 hours.
Separating the meat from the bones, removing the vegetables and straining the stock was time consuming and I needed help from the hubs to finish up.

I am going to make Chicken Noodle Soup today with all the ingredients.

Oh YUM! This reminds me of my husband's attempt to make stock. It simmered all day and smelled so good! Then he left it on the stove all night (because he was waiting for it to cool off and put in fridge), and ruined it. He was so mad!! Hasn't tried again.

Bravo!!! It looks wonderful!! Here is a hint. I keep a bag in the freezer and all the clean peelings like carrot, onion. galic etc I put in the bag and when I have a chicken to boil in they all go or if I fill the bag I boil just those for a veggie stock.

thanks marie...right this minute, it is just cold outside, no rain, no wind. we had rain all day yesterday and i think things may ramp up soon. weather reports said it would NOT impact our weather, only the ocean...but it is clearly impacting our weather. if it stays like this, we may go for a drive and check the ocean from the boardwalk. all of the beaches are closed and the gates are locked. i know people were surfing yesterday and the waves were about 8 feet. the weatherman said last night the waves could go as high as 20 feet. thanks for the warm thoughts, we are fine!!

Hi Debbie, I forgot to mention...I always used to watch Barefoot Contessa's TV show, she was great! In fact, I learned an easy, healthy and delicious recipe years ago from one of her shows and I still do it! Sweet potatoes...you peel, cut them into rounds about 3/4 inch thick, then coat them lightly with extra virgin olive oil. Transfer them to a baking pan and season with a little salt and pepper and roast at 400 for about a half hour, if I am not mistaken. Delicious! :)

That'll work Debbie -- it looks delicious already. We used to make stock from chicken and turkey all the time but not often anymore and I relate to feeling guilty at the grocery store (about a few other convenience purchases as well.)

That does sound very time consuming and I am not one to want to spend too much time in the kitchen that's for sure, I will have to say I am thankful for growing up in this time that we have many things to make a meal nice and quickly :).
Good for you for giving it a go, I bet it will make a great soup :)
